The heroine of the hour is the “bistecca alla fiorentina”, a world-famous and much loved dish known all over the world.
The objective is to offer a curated selection of breeds, which for obvious geographical reasons starts with the Chianina IGP, moving onto the Marchigiana IGP, onwards to the Scottish Black Angus and then onto a selection of the best European meats on the market.
So we want to cook and serve!
All the selected cuts are “scottone”, female animals that are less than 24 months old and have never had calves.
The meat is matured for 21 days, each cut is presented with its receipt of origin/weight/price and then the steaks are cooked on a fiery carbon grill.
